Ginger Carrot Soup

Since Winter arrived, we have been loving this soup recipe. It is easy, nutritious and delicious. It also pairs well with Enhance, our unflavored tincture with two milligrams of full spectrum CBD per drop. Here is to your health and the shift in season.

Roasted Carrot, Sweet Potato and Ginger Soup

large sweet potato, chopped
2
cups carrots, chopped
avocado oil or butter
one red onion, diced
three or four garlic cloves, smashed
2 tablespoons of chopped ginger
vegetable stock
salt and pepper
garnish with what you like: chopped cilantro, pesto, pine nuts, fresh thyme …

Preheat the oven to 400 F. Add the sweet potato and carrot to a pan lined with parchment. Cover with avocado oil, salt and pepper. Roast for 20 minutes until soft and slightly caramelized.

Add butter or avocado oil to a dutch oven. Add onion, garlic and ginger.

After seven or ten minutes, add the roasted veg.

Cover with vegetable stock and bring to a boil. Reduce heat, simmer for 20-30 minutes.

Use a hand held immersion blender or a blender to blend the soup.

Add salt and pepper to taste as well as garnish and enjoy!
